A Visit with my Mom

Mom came into town this evening to see the kids... She is a completely different person now that she is "separating" herself from my dad. Yet she got off the plane and pretended like nothing was wrong but I personally could see right through her. I just hope that she makes good choices in this situation and that she doesn't stomp on people on her way. I do know that she needs to stop leading people on and she needs to set things right. It is ripping the family apart and I can't stand it. I want so much to go give my dad a hug and I can't because it is a 20 hour drive to get there. Hopefully in a few weeks I can just show up and give him a HUGE, HUGE hug. Okay enough of that time for bed 7:30 is fast approaching.

Recipe of the day!

Quick Chef Egg Salad

You'll need

3 hard boiled eggs peeled
Mayo or miracle whip
1/4 onion
1 celery stick
Bread of choice
Turkey or ham (optional)
Instead of onion french fried onions can be used to add a little crunch

Directions

In your Tupperware Quick Chef or food processor if you don't have a Quick Chef put eggs in and chop. After the eggs are chopped add the onion and the celery. Chop until the onion and celery are mixed in. Add mayo or miracle whip to the texture that you like I use about 2 soup spoons full. Salt and pepper to taste and chill for one hour.

To serve

Make a sandwich and grab some milk or juice and enjoy.

Recipe of the day!

Potato Bake

You'll need

1 med bag of frozen hash browns
1 12 oz can of cream of mushroom soup
2 Cups of corn flakes
1 1/2 sticks of butter
1 Cup sour cream
1 16 oz bag of shredded cheese
extra vegetables or meat (opt)

Directions

Preheat oven to 350 degrees

Mix soup, sour cream and 1 stick of melted butter, and cheese in a large bowl. Add vegetables and meat. Add 1 cup of corn flakes. Stir in hash browns. Spread mixture into a 9 x 13 baking pan.

Topping

Melt 1/2 stick of butter and mix with remaining cup of corn flakes and spread on top of potato mixture

Bake

Bake at 350 degrees until heated through about 1 hour. Let cool for a few minutes and enjoy!
